15 minutes Breakfast Tacos (great for suhoor) - 40g protein!

Perfect breakfast or suhoor for upcoming Ramadan Inshallah to keep you full till your dinner or iftar ☺️ These come together in under 15 minutes and will keep you full till evening !

Turn cooking mode on

1.

Heat a pan with oil spray. Half-fry the eggs until the whites are set and the yolks remain slightly runny. Set aside.

In a bowl, mash half an avocado. Add salt, garlic granules, red chilli flakes, and lime juice to taste. Mix well.

1/2 tsp Red chilli flakes

1 Lime juice

Spray the pan lightly with oil and fry the spinach until wilted. Season with salt, garlic granules, and red chilli flakes. Remove from the pan.

In the same pan, fry the turkey rashers without adding oil until cooked and lightly crisp.

Toast the two small tortillas until warm.

2 Tesco tortilla

Assemble the wraps:

1.

Spread the avocado mash evenly over both tortillas and add 1 tsp low-fat mayonnaise to each.

2 tsp Low-fat mayonnaise

Add the eggs.

Add the spinach.

4.

Add the turkey rashers.

5.

Drizzle the chilli oil evenly across both wraps.

Drizzle 1 tbsp sriracha mayo over both wraps.

Sprinkle with red chilli flakes and dried parsley, then finish with a squeeze of lime juice.
